Finally Friday

It’s been a long week friend.  I am glad it’s Friday.  I get to SLEEP IN tomorrow!  Whatever that means!  I pray the boys will have the same thing in mind.  It’s supposed to be rainy all day so hopefully the dark clouds will trick them into thinking it’s still night-night!  One can only hope.

Dinner last night was a delicious comforting bowl of Progresso Light Italian-Style Soup.

When school started we changed up our eating schedule to accommodate the famished children that come home in the foulest of moods.  To be honest, I am famished by 4 pm too.  Instead of eating dinner at the traditional dinner time, we eat it after school and then have a snack later on in the evening if we get hungry again.  Most times they don’t or they get hungry for a little something right before bed.  It has been working out so well.  They relax for about 30 minutes then eat dinner. Afterward, I clean up the kitchen while Luke does his homework and Aidan plays.  So by 6 pm we are relaxing and enjoying the evening instead of just getting dinner on the table.  Rushing through it so that I can get them started on their bedtime routine while cleaning dinner dishes.  <—–impossible.  Another advantage is that they aren’t snack, snack, snacking every 30 minutes because 1) they haven’t eaten since 11am and 2) They are much happier having had a full meal because they come home HANGRY!

hangry

I also am not snack, snack, snacking my way to dinner and ending up not hungry for dinner but still unsatisfied because I haven’t had the ritual of dinner.  It’s a win-win.

So…..later in the evening I had a little treat of a Chia Tea Latte and a Luna bar.

photo 2

A few hours later I was hungry again and had an apple, a few almonds and a piece of Jamie’s cinnamon bread.

The Bodybugg looked good again yesterday!  Even though my workout was a bust, I stayed active enough the rest of the day to make up for it I think.

*******

Today’s breakfast was the same as yesterday. Nature’s Own Bagel Thin and peanut butter…..I actually sat down for 2.5 seconds to enjoy it! Winking smile  Better than on the run.

The weather in Dallas was dreary dreary dreary.  One of those morning I would have loved to have snuggled back down in the bed and listened to the rain.

Instead I went to the gym and did an upper body workout.  It was a nice compromise.  Even though weight lifting isn’t easy, it is easier than running for an hour when all you want to do is crawl back in bed!

I printed a workout from Bodybuilding.com that I found a few months ago.  It’s a fat loss training program and I REALLY like it.  It has an upper body workout, a lower body workout and then a total body.  I like separating the strength training this way because I think it works well with my body type.  Since I tend to put on muscle pretty quickly and being as short as I am I don’t like to spend too much time on it, but I know it’s essential.  I skipped the air bikes and did 20 minutes on the elliptical instead of the Stairmaster.

photo 5

After my workout I had my ever trusty Luna Bar.

photo 4

Lunch was a Blueberry Banana Protein Shake

photo 1 (2)

Today’s Shake Had:

1/2 cup fat free cottage cheese
1 scoop MRM protein powder
1 cup water
lots of crushed ice
1 tbsp. chia seeds
1/2 frozen banana
1/2 cup frozen blueberries
1 tbsp. sugar-free vanilla pudding mix.

100% delicious!

After talking to my dear friend for 2 hours….I went to pick up my sweet baby girl from the salon.

It’s tough being a diva.

What’s funny is that she’s not really a diva.  She’s a total tomboy.  The groomer was not happy when I reminded her not to put bows in her hair.  I said “For real….I can’t explain how much we both hate them!”

After school the guys ate yummy delicious greasy pizza from Little Caesars and I had a French bread pepperoni pizza from Lean cuisine!

lean cuisine

It’s ok though, I had a cookie afterwards.

kashi cookie

Kashi Cookie

Sorry there is no lovely picture because I am sure we have all seen a lean cuisine pizza but honestly I was so hungry I forgot until it was half gone….and the cookie, I was just too excited about having a cookie.

Sadly, the cookie wasn’t very good.  I am surprised because I love Kashi foods.  Especially the dark chocolate oatmeal cookies.  Strangely enough it started to taste good about four bites into it.  I think the flavor of the cookie didn’t agree with the spicy pizza I had just eaten.  I will just have to try it again!

We are planning to watch Snow White and the Huntsman tonight but what I really want to do is watch my DVR’d X Factors!!!  We’ll see who wins! The odds are not in my favor….I am out numbered ya know!

New & Old Faves + a plea from me

Things are back to normal around here finally. I am so glad. I thrive on a routine and schedule and so do my kids. I have found it really remarkable that all last week while the boys were away, I didn’t need a nap or feel the slightest bit tired at any point. Yesterday by 2 pm, I crashed and burned. It may have had something to do with the fact that I got a solid 8-9 hours of sleep every night last week and then Sunday night I was up every hour with a small child who wouldn’t stay in his bed. Could it also have had something to do with the fact that BOTH children were up at 5 am with me? Even though I could really use a nap right now, I am so delighted to hear them playing with army guys in Luke’s room right now. I know for a fact that the break was so good for my mental and physical health. I have found myself calm and assertive instead of screaming with a headache and frazzled nerves. THANK YOU MIMI AND PAPA for taking them for an entire week so I could re-charge!

Sunday night I made a new recipe from my Taste of Home Comfort Food Diet Cookbook

photo 1

New Favorite Recipe:

Taste of Home Baked Tilapia

This was incredible. THIS COOKBOOK is simply the best.

Old favorite breakfasts:

photo 2

These were my breakfasts the last two days

Above: 1/2 sandwich thin with 1 tbsp. JIF natural peanut butter (yesterday morning)

Below: 1 tbsp. Justin’s Maple Almond Butter on a banana (this morning)

photo 5photo(10)

Microwave the banana and nut butter for 30 seconds for a warm delicious breakfast or snack.

Old favorite post work out snack:

Dannon 0% Greek Yogurt in Blueberry w/ 2 tbsp. homemade granola

photo 3

I had this yesterday after the gym along with an apple

New Favorite Meal:

This was dinner last night and most likely I will have it again tonight. I am not a fan of a heavy dinner so I REALLY like having this low calorie/nutrient rich smoothie.

Healthy Smoothie:

  • 2 cups spinach
  • 1 small banana
  • 1 cup frozen strawberries
  • ~ 1/2 cup frozen pineapple
  • 1 scoop EAS Lean 15 Protein Powder in Vanilla
  • 1 tbsp. chia seeds

photo 4

Old favorite workout:

Jillian Michael’s 30 Day Shred.

Over our vacation last week I decided to take an extended break from my workouts. Meaning I didn’t workout for 7 days. The break was nice. Very nice, but I was more than ready to get back in the gym Monday morning. Much to my surprise…I was not able to do what I had been able to do the week before! Imagine that. My heart rate was crazy high so I had to keep it slow and steady. I broke a sweat after just 10 min of jogging at 5.0 mph. I guess it was a good reminder of my humble beginnings. Yesterday and today I have been easing back into my old workout routine by breaking it up a little. Yesterday I jog/walked on the treadmill in the morning for 30 min and then in the afternoon I did level 2 of Shred. Today all the treadmills were taken so I had to use the elliptical machine. Thumbs down I just did 30 minutes on that and then when I got home I popped in Shred again. Aidan loves to workout with me. I have a secret prayer that we will be running buddies someday!

photo 2 (2)photo 1 (2)

and listen…if my 5 yr. old can do it….SO.CAN.YOU!

Today’s lunch was YUM! Maybe a new favorite.

I put a Morningstar Asian veggie patty on a FlatOut flat bread and grilled it in my Panini Maker, along side some strawberries and baby carrots.

photo 3 (2)

……and THEN these came!!!!

NEW FAVORITE!

We found these at the Allen Outlet last week but they didn’t have my size. So we ordered them and they came today!

Nike Women’s Flex Trainer

Nothing better than a new pair of running shoes!!! I do love my K-Swiss Tubes, but it was high time for a new pair! The tubes will retire to my running shoe graveyard.

*****

I wanted to share a really great post that I read on another healthy living blog that I love.

“You Can’t Out Exercise A Bad Diet”

She hit the nail on the head with this post. I couldn’t agree more with everything she said.

Now it’s time for me to get on my soapbox. I try not to give advice on here, only what I have experienced personally. Everyone is different and different things work for different people.

I see time and time again people jump head first into a fad diet (think low or no carb), excluding entire food groups. Start an intense workout regime like P90X or Insanity when they haven’t so much as walked a full mile in ten years. They expect their lives and bodies to change over night or they believe they have found a miracle! I know there are a lot of exceptions but I think 9 times out of 10 they have set themselves up for failure, defeat, gaining more weight, feeling hopeless or unworthy.

I have done the same thing. I have done it all. Adkins, South Beach, Hydroxycut, Xenedrine, Weight Watchers, starvation….. I have learned one thing. I must do everyday what I know I can do for the rest of my life. Can I live with no bread? Can I do 2-3 hours of a workout 5-6 days a week? I could, but would I want to? It isn’t sustainable. I have seen time and time again (myself included) people start out sprinting on Monday, but then peter out by Friday because they are burned out already. And rightly so!

Then there is the diet situation. You can’t out train a bad diet. You can workout all you want but if you don’t change your diet, cut waaay back on drinking (or better yet, quit all together), quit smoking, quit staying up all night….working out isn’t going to do a thing for you. DIET & Exercise. When I lost the first 30 lbs., I wasn’t working out at all. It wasn’t until I hit a plateau that I started working out. It’s been said, 80% diet 10% exercise and 10% genetics. This is the absolute truth.

So I am going to get off my tangent now and just pray that if you are serious about getting in shape and getting healthy, you will take a look at the entire picture. Look at what needs to change, what you are willing to change for a lifetime and start there. Start by just going for a walk, then a jog….start by weaning yourself off soft drinks or for crying out loud quit stopping at fast food joints, better yet, quit eating out all together. Most would be floored at the calorie bombs these places serve up. Horrific. Educate yourself on what you are putting in your body & get real & honest with yourself.

A Civil War and a Great Wolf Adventure

I’m not going to lie. I wasn’t prepared for the summer break. I didn’t know I needed to be. My children love each other. Or so I thought. Last week was like a civil war around here. Do any of you know how mentally exhausting it is to be a peacemaker? I didn’t, but I do now! Thankfully Jeremy is on vacation now and the boys will be going to Mimi and Papa’s house next week. Vacation! Couldn’t have come at a better time. I love my kids more than anything but…..sometimes, a sistah needs a break!

On to happier times…..

Monday-Wednesday the past week we took our little family to Great Wolf Lodge in Grapevine, Tx.

DSC00595

DSC00536DSC00541

We stayed in a Wolf Den

1000-Wolf-Den-Suite

This picture in not mine, it was taken from the website. But this is what it looked like. The boys were in heaven in that little den. I guess I could have climbed up on the counter for a shot? Next time for sure!

DSC00542DSC00543

Enjoyed a beautiful view from our room. That’s the Gaylord Texan in the distance.

Slid down these slides not nearly enough.

Got splashed by this thing that howls and sprays water every 15-20 minutes.

Mom and Dad attempted to work on their tan while wearing SPF 50,

and watching the boys swim their little hearts out.

They made me laugh with these goggles

photo 2photo 1

The first night we ate at Fuddruckers. I was absolutely starving by this point and forgot to take a picture. So I took one of what was left. This would be the pattern over the next few days. I got the turkey burger and fries. I divided the meal in two, ate half and boxed up the rest. Which I never ended up eating. Thumbs down

photo 1 (2)

There were cuddles with the little one,

photo 2 (5)

….and the big boy was attached at my hip the entire time.

I am not quite sure why he has started with this all of the sudden…Confused smile

photo 3 (2)photo 4 (2)

The Iron Horse Fitness Room in the hotel was really great. I was so excited to use their fancy treadmill! We all worked out Tuesday morning and on Wednesday morning I got up super early to work off those ice cream cones. Yes….THOSE…as in plural. As in two to be precise!

There was a small crisis that my brilliant son averted.

“Jeremy….I left my running shoes by the front door yesterday morning….”

“Mommy, you can wear my shoes!”

“Oh my gosh….Luke you are brilliant! I CAN wear your shoes.”

They were a little big believe it or not, but they did the job!

DSC00567

In order to still eat healthy while on vacation, we always pretty much pack our entire pantry…We also went to the grocery store to stock up on cold foods that we kept in the refrigerator in the room. Minus the Fuddruckers and breakfast Wednesday morning we snacked all day and had cereal and sandwiches for our other meals.

This is also a good idea if you are the type who is not inclined to spend a small fortune on food.

DSC00571

Aidan and I enjoyed our “Waterpark Picnics”

DSC00576

Not wanting to wait a few minutes before swimming….he decided to ignore us.

DSC00577

There is a game called MagiQuest.

They love it. They actually were able to finish the game this time! The last time we went, it was for only one night and they didn’t get nearly enough MagiQuest time.

The game is described as this….

“With a magic wand in-hand, you’ll explore an enchanted kingdom and join in the ultimate adventure as you enchant objects, befriend a pixie, learn from an ancient wizard, battle a goblin and outwit a dragon. We guarantee this live-action adventure game is unlike any other you’ve ever played. You’re sure to become legendary when the getaway you planned becomes epic.” – Great Wolf

It is like Zelda except its in real life! Super cool. They have these wands that you point at different objects through the entire hotel. The objects talk to you and do all kinds of cool stuff. That’s all they wanted to do….

DSC00580

DSC00582

I always poke fun at them (Jeremy included) for being video game nerds….

This is my impression of them!

DSC00583

Aidan was exhausted one evening so while Luke and Jeremy played the game, we went back and pretended to swim in the ocean with our “Snerkle”

photo 3 (4)photo(5)

I indulged in my own personal guilty pleasures!

Over-priced coffee and gossip magazines? Yes please!

photo 5 (4)

Wednesday morning we went to I-Hop for breakfast. I got the Simple and Fit Whole Wheat French Toast. Once again I was starving and Luke said “MOMMY! You forgot to take a picture!”….soooo once again this is what was left.

Our first visit to Great Wolf was for Luke’s 9th birthday.

It was such a great time and we are going to (God willing) make this a yearly trip for as long as we can! I don’t think the boys will EVER out grow it.

New Go-To recipe

My my my, do I have a new go-to recipe for my collection!  Actually, make that two!

Healthified Lasagna

photo 1 (2)

&

Pesto Muffins

photo 2 (2)

Wow, so so good!

photo 3

I used lean ground turkey instead of the lean ground beef that the recipe calls for and I used Bertolli Tomato Basil Pasta Sauce instead of the Muir Glen, but other than that I didn’t change a thing!

We could make it a bit healthier by using eggs whites instead of one whole egg, whole wheat noodles (I looked for them but couldn’t find any) and possibly fat-free cottage cheese in place of the ricotta.  Over all it is a really healthy recipe!

My picky eater said that it was his new favorite thing I make!  Win!

The Pesto Muffins were wonderful!  I have never had anything like them.  Picky Eater loved them too, that was until I told him the crunchy things were walnuts….he doesn’t like walnuts.  I should have told him it was candy….Annoyed

Here are the links for the recipes:

Eat Better America Healthified Lasagna

Taste of Home Pesto Muffins

Looking forward to a week of leftovers and possibly some to put away for a rainy day!

********************

Todays breakfast was a break from the norm.  I wanted some oatmeal, some yogurt, some peanut butter, and a smoothie.  But since I couldn’t eat all that,  I settled on a parfait of sorts.

photo 4

Chobani 2% Low-Fat Strawberry Banana Greek Yogurt, 1/4 cup homemade granola, 14 natural almonds.

Workout

Next up was Spin class!  I was sad this morning when it wasn’t my favorite instructor who opened the door…..Annoyed  I thought, oh no…. I hope she isn’t a drill sergeant….I’m not prepared for that.  She wasn’t, she was easy….but easy = me not getting a very good workout.  On the upside, she was fun and breezy so it made the hour pass quickly.

Lunch

I was still craving that smoothie!  So I whipped one up!

photo 1

Please excuse my rude finger for photo-bombing.

I was excited about my creation today because I picked up the super food KALE during my last grocery trip.  I have never had kale and was pumped to add it to my super healthy all-in-one meal.  Since I got so brave with the spinach last week I thought I would branch out a little more!  While I was getting it out and rinsing it off, I tried a little piece.  I chewed it up a little, not bad…..a little more, um eww….…..a little more and then I spit it out in the sink.  Wow, was it bitter!  I went ahead and put a large handful in my smoothie thinking everything else would drown out the kale the way it does the spinach.  Wrong.  Ornamental Kale is very strong come to find out!  I drank the smoothie anyway trying to ignore the bitter undertone & thinking of all the health benefits.  I put the remaining bunch of kale down the garbage disposal.  Note to self, Ornamental Kale is not for smoothies!

Here’s the rundown of the nasty super healthy smoothie:

  • 1 large handful of kale
  • 1/2 cup frozen strawberries
  • 1/2 cup fresh raspberries
  • 1 1/2 cup frozen pineapple
  • 1 cup unsweetened almond milk
  • 1 scoop EAS Lean 15 Vanilla Protein Powder
  • 1 tbsp. chia
  • 1/2 tbsp. coconut extract.

Side note….the smoothie as fantastic BEFORE I added the kale, and it was extremely filling.

Snack

photo 2

2 Wasa crackers (light rye), 2 slices Hormel Natural Choice Deli Turkey, 1 slice (split) Sargento Reduced Fat Provolone.

For the rest of the day I will be finishing up the mountain of laundry and playing referee for two little boys who can’t seem to be within 5 feet of each other with out one of them screaming bloody murder.

I am ALSO going to prep THESE for breakfast in the morning!

Have a GREAT DAY friends!

Questions:

Have you ever had kale? What type do you prefer?  How do you use it?

3rd time’s a charm

I slept in this morning until almost 7:30 and it was so lovely!  I had a 9 am spin class that I wanted to make so I quickly QUICKLY drank my coffee, got the boys ready, grabbed a banana and headed out the door.  It was, no surprise, great again.  There was a new teacher and I really liked her.  She was super laid back and had some kick butt music.  Music is the secret ingredient to a great workout for me.

photo 1photo 2

Aidan got a haircut yesterday.  He wanted his hair “like Daddy’s”.  So precious.

I had to go run some errands after the gym so I ate a new bar called a uber Bar by Lara Bar to hold me over until I could get home for lunch.

Lara Bar

WOW, YUM!

When I got home I threw together some leftovers from last night along with 1/2 cup of chickpeas and red kidney beans.

photo 3

May lack of breakfast was apparent by my appetite at lunch.  After my veggie bowl I ate a Tone-It-Up muffin and a Chewy Brownie Cupcake smothered in PB Thumbs up

photo 4

The boys and I just chilled out and did some chores around the house the rest of the day until it was time for me to get started on my homemade pizza dough for the Healthified Pizza I made tonight.

Healthified Fresh Mozzarella & Tomato Pizza

Let me just talk ad nauseam about this pizza crust.  The first time I made a yeast bread was about 3 1/2 years ago and I had help from my amazing mother-in-law who learned from the best of the best at making yeast breads, HER mother-in-law.  So, I was pretty much starting over. Thank goodness for Google and my Cooking Light Cookbook.  With the first packet of yeast,  I learned what 110 degree water really feels like but I will still use the new thermometer I bought just for this occasion next time. For the second packet of yeast I learned that just because the recipe doesn’t say to give the yeast sugar, it’s probably best to go ahead and add it. And for the third and final packet of yeast, when my yeast mixture finally bubbled after 8 minutes…. I learned that this is going to take a lot of practice and now I am obsessed with making yeast breads.  After I kneaded the dough for what probably wasn’t long enough and most likely added too much flour during the process, I put it in the window to rise.  I was exhilarated to see it had risen!  Then I put it in the fridge to rise some more (per the directions) for 2 hours.  When I took it out to bake, it had risen a bit more (YAY!) and I rolled it out onto the pizza sheet.  It seemed a bit tough but I didn’t really know what it was supposed to feel like.  When all was said and done, it was….meh.  A little dense, a little tough.  Not Pizza Hut by any means but then again it didn’t have a cup of oil in it either.  All in all I think it was a pretty good result and will try it again soon or look for some other recipes.   I used whole wheat flour instead of all-purpose flour so I am pretty sure that had something to do with the texture.   The rest of the pizza besides the crust was wonderful.  It was also my first time working with fresh mozzarella and the tomato basil combo is one of my favorites.  I am glad I have some healthy food waiting for me over the next few days!

Question of the day…..

Are you a yeast bread making master?

I’d love any tips and tricks!

Storms and Baby RayBans

I left off yesterday before I posted dinner so I‘ll start with that!

photo 1

Alexia Sweet Potato Fries, 1/2 Morningstar Black Bean Burger, Green Giant Seasoned Steamers.

I can’t remember what these were called but I think it was the Mediterranean blend with potatoes, carrots, yellow carrots, and zucchini.  Those vegetables were amazing!

The thunder storm this morning woke my little boys up at 5am.  For some reason the living room made it much less scary. How cute are they?

Breakfast Smoothie!

photo 3

The color was not as horrific as yesterday but none-the-less, a lovely shade don’t you think?

This had:

  • 2 cups spinach
  • 1 tbsp. chia
  • 1 scoop EAS Lean 15 protein powder
  • 1 cup frozen peaches
  • 1 cup Dole frozen Strawberry & Bananas
  • 1 cup Silk Unsweetened Vanilla Almond Milk

Yum

Workout

45 min. Spin.  It was awesome again! The gym was completely empty because of the rain and it was GLORIOUS!

After the gym we went grocery shopping at Target…..they have BABY RAYBANS in the optical dept.!  If I had a million dollars I would so buy him these.

photo 4

On the way home I had one of these granola bars.  I had never seen them before but they looked delicious.  I love food marketed for kids because they are always a great portion size for me.  These are only 100 calories, perfect for a little snack and they are oh so delicious! The other flavor is berry and I am looking forward to trying those as well.

Quaker School Days Granola Bar in Amazing Apple

Ahhhhh, finally lunch, I was starving.  Today was the perfect day for a warm bowl of soup.

photo 1 (2)

Wolfgang Puck Hearty Garden Vegetable

photo 2 (2)

I had 2 WASA light rye crackers on the side.

This may be the best canned soup I have ever had.  It was so savory and almost had a sweet taste to it that I couldn’t quite place.

Today was Luke’s last day of school so we “celebrated” (I hate that term).  I’ll say acknowledged the occasion….who am I kidding? We celebrated with Luke’s treat of choice.  He wanted a Sonic treat.  This time I showed some restraint with the least offensive treat on the menu.  The sugar coma from last time was enough to make me never want another thing from Sonic in my life.

photo 3 (2)

The Vanilla Cone.  So simple but so good.

photo 4 (2)

We ran a few more errands and when I got home these were calling my name.

Dinner

photo(4)

Van De Camps Lemon Pepper Parchment Bake, Archer Farms Coconut Cashew Rice, and a recipe from my Weight Watchers cookbook.

Roasted Asparagus and Red Peppers

1 lb. asparagus, trimmed and fibrous stalks peeled
1 large red bell pepper, seeded and cut into 1/2 inch strips
1 lemon
1 t. olive oil
1/2 t. salt
1/4 t. crushed red pepper

Preheat oven to 400. Spray nonstick baking sheet with nonstick spray. In large bowl, combine asparagus and bell pepper strips, spray with nonstick spray. Squeeze in 1 T. juice from lemon, then add oil, salt, and crushed red pepper; toss well to coat. Arrange vegetables on baking sheet. Bake until tender (shake pan occasionally), 15 to 18 minutes. Transfer vegetables to bowl; grate in 1 t. lemon zest and toss.

Yield: 4 servings: 39 calories, 2 g fat, 0 g sat fat, 0 g trans fat, 0 mg cholesterol, 295 mg sodium, 5 g carb, 2 g fiber, 2 g protein, 16 mg calcium.

Dinner was so, so.  I wasn’t loving the fish this time for some reason but the veggies were really good.

I finally finished Catching Fire.  I have so many questions! Where are they?  How did they steal the hovercraft?  How is Katniss not dead? Where are Peeta and the others?  The Capitol is so powerful, how in the world did Haymich and the others pull this off? WTH happened to District 12?  Where is Prim?  I can’t wait to dive into Mockingjay…..now!

Skipped Bootcamp, Baked Sweets

I always get a little excited when I am mixing a smoothie now that I have added spinach…..I can’t wait to see what horrific shade it will turn…..

Breakfast

photo 2

photo 1

“Shade of Grey” Smoothie

  • 1 cup frozen peaches
  • 1/2 cup mixed berries
  • 2 cups spinach
  • 1 cup unsweetened almond milk
  • 1 scoop EAS Lean 15 Vanilla protein powder
  • 1 tbsp. chia

Despite the horrific shade of grey…..it was delicious!  I love when my meal represents the colors of the rainbow.  If you mix every color don’t you get black?  And isn’t grey pretty close to black? Just sayin!!!! Winking smile

I forgot Jeremy had a meeting this morning and I wouldn’t have help with the boys so getting to the  8am Bootcamp was pretty much a laughable aspiration.  We are going to go to the one on Saturday morning…….hopefully.  Once again, a lofty aspiration, but we are going to try our best!!!

While I was waiting on him to get back so we could do Bob’s workout together, I baked.

I baked some incredible muffins!  They are from the gorgeous girls at Tone-It-Up

photo 3

photo 4

Jane’s On-The-Go Muffins

They are a low-fat oatmeal banana chip muffin.  Their recipe calls for carob chips but I didn’t have any nor do I know where to get any.   I know carob chips have half the calories of chocolate chips, but I used mini chocolate chips instead.  These are so delicious.  They would be very good without chocolate chips, with walnuts or with both!  I calculated the nutrition value for a few different variations.

With 1/2 cup mini chocolate chips:

161 calories, 33g carbs, 3g fat, 3g fiber, 0 cholesterol, 3g protein

Without chocolate chips:

114 calories, 27g carbs, 1g fat, 3g fiber, 0 cholesterol, 2g protein

With 1/2 cup walnuts:

147 calories, 28g carbs, 4g fat, 3g fibers, 0 cholesterol, 3g protein

I started out having just half, then I had to eat the other half immediately!

Workout

BOB

This is slowly but surely no longer the most intense workout ever.  Each time I am finding myself hanging in there longer and longer.  TODAY, I was able to hold the squat position for the entire time each time.  I may not have had my thighs parallel, but I wasn’t standing there with my hands on my hips cursing Bob to hell.  I still hate the runners lunge push-ups but I do them anyway.  They are just weird and awkward for me.  What is the point of those anyway?  Maybe if I knew that, I would enjoy them, well, maybe just not hate them.

Lunch

photo 1 (2)

1 cup leftover broccoli, 1/4 cup chickpeas, 1/4 cup red kidney beans.

photo 2 (2)

Apple & 1/2 cup cantaloupe.

I ended up not eating the apple at lunch but ate it later for a snack along with some popcorn.

Burnt Fur Stinks

In the morning before anyone gets up, I come to my spot at the dining room table and read, pray for strength, wisdom and grace to make it through the day, wake up, have some coffee.  Sometimes I like to light a candle and just bask in the peaceful loveliness of it all.  My cat……..likes to invade my space during this time.   It’s ok though, she doesn’t talk or ask for anything and her purr is quite relaxing as well.  This morning she caught her tail on fire.

I heard this WHOOSH sound and looked up to see her TAIL…..ON FIRE!  I don’t even know what happened after that but the next thing I knew there were bits of singed hair all over the table and the nastiest stench in the air.  Poor thing.  She was fine, didn’t even know what was going on and why her relaxed momma was all the sudden freaking out.  As she traveled from room to room her stench followed her and didn’t go away until well after I had lit every single candle and Scentsy lamp I own.  Good Morning Tuesday!

Breakfast

1/2 Orowheat sandwich thin, 1 tbsp. JIF Natural PB, sprinkle of chia and cinnamon, 1/2 small banana

Workout

60 min. Spin

It was AWSOME today. I think I am finally getting the hang of the bike and the resistance. I had a lot of fun today and didn’t once feel woozy or feel like I needed to back off. I love the instructor on Tuesday.  She is very mind-body oriented and is always saying just the right thing at the right time to make you dig deeper into that zone when you just THINK you are giving it your all.  She made me dig deep out of that comfort zone.  She said something this morning that I think only I and one other person understood.  She was encouraging us to up the resistance & then she said,

“If you want to stay the same, stay the same, if you want to change, then change.”

Snack

Apple & 2 pieces of protein bread

Lunch

1/2 cup cucumbers, 7 carrots, 1 cup cantaloupe, 1/4 cup blueberries, 1/2 a serving of my tuna salad recipe

Morningstar Chik’n Patty, Alexia Chipotle Sweet Potato Fries, Green Giant Seasoned Steamers Tuscan Seasoned Broccoli.

This was the first time I have tried this broccoli.  I tried to find it on-line but I couldn’t.  The description on the bag says it’s seasoned with a parmesan cheese sauce and Tuscan inspired seasonings.  It was delicious!  Even Luke liked it and that boy doesn’t like anything but pizza & cake.

I have been looking and looking, “pinning”, book marking, and tearing out all sorts of recipes from my magazines.  This one from Spark Recipes was one that I thought sounded really good!  I had all the ingredients on hand so I gave it a go.  I warned everyone that they are “HEALTHY” brownies so don’t expect much.

Chewy Cupcake Brownies from Spark Recipes.

They are good!  They don’t taste like real brownies but they are a nice treat for those who are watching their figure and would like a sweet treat.  I like recipes like this because they satisfy my sweet tooth without making me want to eat the whole pan or batch,  or the entire remaining bag of chocolate chips….Who me?  NEVER! In love

I substituted the all-purpose flour with whole wheat flour and added a packet of Starbucks VIA to the dry ingredients.  I don’t think either one made a difference in taste.  I will definitely be making these again.  I might try a glaze of some sort the next time.  They’d be good with a smear of PB too!

…and the boys weren’t too terribly disappointed! L even asked for one in his lunch tomorrow!

WIN!

Afternoon Happenings

This afternoon we had to go to Petco for some cat food.  We always love going there to see all the sweet little animals.  They had some kittens there today!  We would have a zoo if we could.  Jeremy even wants horses and cows someday.  Never gonna happen but…just sayin, we love animals around here.  Aidan is forever rescuing bugs and critters, I swear the child would bring in an armadillo of he had the chance!

My friend Cheryl shared this on her Facebook page today and I just loved it.

Jeremy and I have definitely been through our fair share of trials.

Today was an all around great day!  Tomorrow is Luke’s next to last day of school, only a half day!  I am excited for him, I know he is ready.  He will be going to his dad’s house for the entire month of July this year so I am going to have to make the most of the few weeks we have before he goes.  Sad smile

I am hoping to MAYBE go to BootCamp in the morning but its at 8:15am and I am just not quite sure I will be able to make it that early.  I am certainly going to try!  Wish me luck!!

Cookie dough truffles.

Thank goodness they’re almost gone.

Basically I have been living off fruit and bread with bits of protein here and there!   I am eating what I am wanting….no need to eat what you don’t want just to get to the stuff you really want.  Winking smile But I think because we have been really busy this week I am just grabbing what is convenient.  I don’t have to give any thought or put prep into it.  I mean at least it’s not chips and cookies, or fast food, but I can do much better than this. A Food Rut is what I call it!  I am going to REALLY make an effort this week to plan some meals.  I haven’t been able to spend the time I like to gather recipes and make out a grocery list.  I have been having to go grocery shopping on the fly and just wing it with a haphazardly made list of items we are out of.  As I was grocery shopping yesterday I started to get hungry.  I saw pasta and sauce and thought….”Ohhhh I want some spaghetti.”  I saw some hamburger buns and thought “Man, I want a burger.”  I saw a Boboli Whole Wheat Pizza Crust and thought, “Dang….I need that….I want some pizza!”  Then I thought ok, next week….I am making all of that!

What I am Loving Lately

photo 2 (2)

Spin.

I have done it 3 days this week and I am loving it!  It’s so challenging and fun.  I have been wearing my heart rate monitor to make sure I am not over doing since the first time I tried the class I felt like I was going to pass out.  I have been burning about 500 calories in the 60 min class and about 350 in the 45 min class.  There have been several times I have had to really pull back because it was too hard.  I love that because it means I have room to improve and something to work on!  It feels great to be out of that exercise rut.  Now, if I can just get out of the food rut!

Cetaphil Cleanser

I know this has been around for ages, but it’s new to me.  I LOVE IT!  I have oily and sensitive skin. This seems to have made my skin less oily, softer, evened out my skin tone, improved the texture and cleared up a recent break out over night. Jeremy’s skin is the same as mine and he will use whatever I use to wash his face.  I have noticed an improvement in his skin as well.

Plants that I can’t kill.

This is a Wandering Jew that has taken over a spot in my back yard.  I am going to propagate this and plant it in a pot out front.

Bath & Body Works Lavender Salve

I just love it.

Well, I am off to spend 4.5 hours on Pinterest gathering recipes…..wish me luck!!!

Articles I have loved this week:

Controlling Post workout hunger – Greatist.  I know if I don’t eat enough breakfast I fall victim to this.

Mouse is Jillian’s partner?!  It’s like a twist at the end of the book!  I am SO excited for them!  It’s no secret she is a huge role model for me and I attribute about 95% of my weight loss to her no nonsense approach to fitness and nutrition.  I look forward to hearing about her adventures in Mommyhood!

I hope everyone has a beautiful and safe Memorial Day Weekend!

7th Anniversary!

Yesterday was my 7th wedding anniversary with the most incredible man I have ever known.

Breakfast

photo 3 (2)

Nutrigrain Honey Oat Waffle, 1 tablespoon peanut butter, sprinkle of cinnamon, 1 orange

Workout

I was SO excited to go to the gym yesterday morning.  I made it to my first Spin Class!  I loved it.  I was very much out of my comfort zone.  I had no idea what to do with that bike.  It was unlike any other bike I have ever been on.  The instructor was awesome; showing me how to use it but I still have some learning to do.  At first I had the gear too easy, then it was too hard.  I felt like I was going to pass out at one point!  But I got the hang of it by the end and I am looking forward to going back!

Snack/Lunch

When I got home I intended on having a snack, showering and then having a real lunch.

photo 4 (2)

Gala Apple & 14 alomonds

photo 2 (2)

2 pieces of Cinnamon Swirl Protein Bread w/ 2 teaspoons peanut butter

I was so hungry I ended up eating all of the above and wasn’t hungry for lunch.

I spent the afternoon preparing a surprise for Jeremy.

With the boys sufficiently bribed with Chick-Fil-A and candy as well as threatened with no Pizza Friday or videos games if they interrupted us…..

We had our

7th Anniversary Dinner!

“Lunch”

I didn’t have time today to eat lunch, but honestly I wasn’t really all that hungry.  I did have a Spark & a granola bar before we left for the awards.

I am incredibly exhausted just sitting here.  Jeremy had to go to a meeting at work this afternoon so when he gets home, I am hoping I can go to bed super early tonight.  Like 7 pm early!  9-10 hours of sleep sounds gloriously divine!
