I love you. I am in love with the fact that it was 7pm and the sun was still shining! So long to the SADs! Don’t let the door hit cha! I don’t think I have ever been more ready for Spring and Summer than I am right now. The weather next week is supposed to be GLORIOUS. I see lots of park time, bike riding time, and soccer time in my future. Aidan is on Spring Break this week so I am glad the weather is cooperating!
Dinner last night ended up being an apple and a banana. I’ve got hungry days and not so hungry days….but you better believe I was ready for breakfast almost immediately! I really wonder if it has anything to do with the bigger breakfast I have been having. I guess we will see this week!
Thankfully, this morning went much more smoothly than last week. Breakfast was the same as yesterday’s. I ate at about 7am. I really like this combination. I definitely need to add a full cup of milk though. After I let it cool and set, it becomes super thick. I have added more milk to the bowl every morning. I had a class at church this morning at 10am and then went to the last service at 11:30am and I didn’t feel like chewing my arm off which was quite shocking. I did have a Luna Bar while I was waiting for service to start though. I knew I would be ravenous afterward if I didn’t.

We didn’t get home until almost 2pm and while I was very hungry, I wasn’t all bets are off hungry. I ate an apple and a few almonds while I prepared this:
Romaine lettuce, baby carrots, pineapple chunks, strawberries, almonds, reduced fat feta cheese and a light balsamic vinaigrette.
Repeat of yesterday’s lunch.
After lunch, I got the munchies for something sweet, something in the area of chocolate chips. Sadly, we have nothing of the kind in this house. I thought I might bake something, so I got out my recipe binder and the batch of granola I made yesterday. I munched on that while I browsed my recipes trying to satisfy my sweet tooth. I ended up mindlessly eating way too much. I ended up feeling like I had a lump of oatmeal in my stomach for hours afterwards. It was a sad SAD substitute for chocolate chips.
Now that I had a stomach ache, I decided to sit down to start a book we are reading in church.
But I was so sleepy I didn’t make it past the map, and crashed out. I am so pathetic.

Thanks to a lot of prep last night, I was able to throw my crock pot meal for tonight’s dinner together in a flash this morning. Crock pot meals are the best. I absolutely LOVE coming home to a meal already prepared. It’s ALMOST like someone has cooked for you! Well, the closest I will probably ever get in this house!
I made Chicken Tortilla Crock Pot Soup, from Iowa Girl Eats. And My My My, was it fantastic!!! I am so glad we have a ton of it left, because I could eat this all week. Jeremy and I were like Bubba from Forest Gump.
In our best Bubba impersonations:
“We could put it on chips, with cheese and make nachos”
“We could drain it wrap it in a tortilla and have tacos”
“We could put it over lettuce and have a salad”
This will definitely be on repeat many times this week.

Unfortunately I was still a kind of full from overeating earlier, but I did have enough room for a little.
I am remarkably alert for it being so late now, I know it’s the time change. (I Love You!) But, I better get in that bed before I regret it in the morning.
