Getting Ready For Some Guests!

We spent yesterday getting ready for some special guests today!  My In-Loves!!!!  I hate to call them “In-Law’s” because it has such a negative connotation. So I call them my in-loves!  They are coming in town for Aidan’s LAST soccer game tomorrow.

Yesterday we got the house spic & span, house-guest ready and also went to the grocery store for some last minute items.  I am planning on making the delicious Chicken Tortilla Crock Pot Soup I made a few weeks ago, for dinner tonight.  I hope they like it!  After grocery shopping we stopped by Schlotzsky’s for lunch.

Cranberry, Apple, Pecan & Chicken Salad

It was a good thing I was super hungry because this was a lot more than I had hoped for!  I ate half of the half sandwich and all of the salad.  It was delicious! I shared the flat bread with Jeremy, but I wish I hadn’t because it was tasty too!

Later that afternoon, Aidan and I shared some jelly beans (so much for that detox) on the couch while watching cartoons. My lack of sleep from the night before kicked in and I fell asleep for about and hour.  Interesting fact: I saw on Dr. Oz that you should nap between 1pm & 4pm but for only 30 min if you want a pick-me-up.  Any longer and your brain will be in too relaxed of a state. You will wake up feeling more tired than when you laid down for the nap in the first place!  Indeed!  I woke up feeling super drowsy and drunk. Thumbs down

I have never cooked fish before and have no interest in doing so at this point.  I was really happy to see that all I had to do was put these packages in a baking dish for 20 min.

Birdseye Steamed Asparagus, 1/2 cup Uncle Ben’s Long Grain & Wild Rice, 1/2 a Van de Kamp’s Parchment Bake fillet.

There were only two fillets in the box so Aidan and I shared.  Wow.  We ALL loved it.  I was so impressed.  I am not a huge fish fan but am really trying to be.  I am so glad I stumbled upon this!  Thumbs upThumbs up This would make a great lunch too!

The asparagus didn’t turn out well.  I just can’t seem to get the hang of it.  I thought I couldn’t fail with the steamer bag but I did.  Confused smile

I steamed up some broccoli and had another 1/2 cup of rice.

Dinner preparation was full of small mishaps.  I destroyed the asparagus.  The Uncle Ben’s rice bag exploded in the microwave, sending brown rice all over the inside of the microwave.  I bit into a piece of broccoli and immediately spit it out onto my plate like I was raised by heathens.  It was still frozen!  Jeremy had taken the carousel from the microwave out to wash, so I think the broccoli didn’t cook evenly.  Only about half of it was hot enough to eat.  Thumbs down  Needless to say I didn’t get enough to eat at dinner and found myself hungry a few hours later.

I had some of “the boys’” cereal.

This was a perfect bedtime snack, sweet, low calorie and filling.


On the agenda for today: Workout, get crock pot meal together,  & spend some good quality time with my loved ones.

  1. No plans for the weekend, and I haven’t tried a new food recently, but I’m going to try and make something with Eggplant this weekend! I’ve had it before but never cooked with it :)

    Also! What was wrong with the asparagus? Maybe I can help :) I cook it a lot!

    • Oh let me know how the eggplant turns out! I tried eggplant lasagne a long time ago and it didn’t turn out well at all!

      The asparagus, well, first I roasted it and it was slimy then I steamed it in the microwave and it was slimy. I think the last time I had it it was grilled and so good!!!! But I don’t have a grill. Yes, please help! I love asparagus.

        Anywho, I totally forgot about my eggplant because the weekend was a bit crazy… I hate when I let food go to waste! It makes me sad.

        I’ve found the trick with asparagus is that it needs to be cooked at high heat (to avoid the slimy-ness) and it doesnt need to cook too long — assuming you like it with a bit of a crunch and not mushy.
        I cook it a couple of different ways –

        1st: Cut the last 1-2 inches off of the ends… because those pieces can get so chewy because they’re tougher.

        #1 Way to cook: Chop up the fresh asparagus in to 1 1/2-2″ pieces and toss in to boiling water for 3-5 minutes (use the color as a cue, you dont want it to start turning that drab green color and you can always taste to make sure you like the crisp-ness of it), drain then run cold water over it to stop it from cooking (blanch it) They should still be a bright shade of green! I like to toss this in a salad or pasta dish (at the end so it doesn’t cook much more). If you plan on eating RIGHT after it’s cooked, you could just salt in and serve warm without running cold water over it but asparagus seems notorious for getting all wilted and mushy, bleh

        #2 Way to cook: Preheat oven to 425 (thats what I turn my oven to anyway), cut the ends off of the asparagus again, get a pan (9×13) and put in to the pan and spray with Pam or drizzle with some olive oil, salt, pepper and let it roast for about 5 minutes, then toss them around and roast for an additional 5 minutes and then they should be pretty evenly cooked and not mushy :)

        #3 Way to cook: Cut ends off again and either leave long or cut up in to 2″ pieces (might be easier for kiddos :)), get your pan hot and spray with Pam (you need less if you’re using a non-stick pan) or a little bit of olive oil and toss it in there for about 4-6 minutes … it really just dpends on how you like your asparagus — tasting is key! And don’t walk away from it! It’ll over cook in no time! Salt and Pepper is all I usually put on it :)

        ** Also, you dont want too much olive oil/spray because there’s so much water in asparagus if you add too much olive oil (and esp if the pan isn’t hot enough), it’ll keep the asparagus from “breathing” and keep the water in the aspragus and make it mushy… that’s why if the pan isn’t hot enough, it’ll just sweat the asparagus and it’ll be in a pool of water instead of be nice a crisp :) that high heat evaporates the water! And this isn’t a perfect science, it might be a little over cooked or undercooked to your standards within the minute guidelines I put out there… but you’ll figure out if it needs one minute less or one minute more pretty quickly :D

      • Wow Melissa THANK YOU!!!!!! You sound like a professional. I have a Misto and I sprayed the crud out of that asparagus before I roasted it…mushy culprit #1. #2 I chopped of the ends, but not the tops and I saw on a cooking video to snap the ends off where they break easily….I see that the most popular way of cooking asparagus is to boil it. I think I will try again, both boiling as well as your method of roasting. I know I like asparagus! I just need to learn how to prepare it properly. You rock Melissa!
